Last week Rick had to take an emergency business trip, so our menu was put off a week. The kids and I just ate easy stuff and saved the healthy, low points meals for this week when Rick is home. (On a side note, my sweet husband lost 7 pounds this week! Way to go babe!) And, it's a good thing he traveled, because I blew my two weeks' budget (which is really small right now) for groceries on one week. This allowed me to stretch that out through the next pay period.
So, here is our menu for this week:
Monday ~ French toast (Rick's actually gone tonight, too.)
** Change of plans ~ Our local Wal-Mart Neighborhood Market has a deal at the deli where you can get 3 lbs. of different items for $10.00. The aroma of the chicken overwhelmed me, so we got 2 lbs. of chicken tenders and 1 lb. of boneless wings for dinner tonight. Yum!!
Tuesday ~ Easy chicken cordon bleu (I'll make real chicken breasts for Rick and I on the grill. The kids will use Tyson frozen, thus easy!)
Wednesday ~ FFY (Fend for Yourself)
Thursday ~ Chicken kabobs with veggies and brown rice
Friday ~ Cheese and veggie pizza bread
Saturday ~ Chicken fajitas (Rick's office Christmas party is here that night.)
Sunday ~ Soup and sandwiches
