A couple of weeks ago Kyndal said she wished there was a chicken noodle soup that didn't have all those chunky vegetables .. you know just chicken and noodles. (Yes, most of my children are anti-vegetable!!) I make chicken and noodles all the time, with egg noodles, but she basically wanted Campbell's Chicken Noodle Soup with no celery chunks.
So, I imagined what natural ingredients were in Campbell's Chicken Noodle Soup and set out to make it myself.
YUM!!!
I used the chicken and chicken broth I talked about in a previous post. I heated up the chicken broth (which was about 8 cups), added about 16 more cups water and a can of cream of celery soup for additional flavor. Then I added about 1/3 of my shredded whole chicken and a package of linguine noodles broken into about 3 inch pieces. I added salt and pepper to taste and VOILA! It was so good!! She loved it! And, it made a ton! We had enough for dinner last night, Rick and I had it for lunch today, and there's enough for the two of us to have it for lunch on Monday. And, seriously, it didn't cost more than $3.00 for all of that. and it was healthy!!
