Food Review

This has been such a yummy week at our house from a food perspective!

My meals have turned out so good! And, we've even been eating extra healthy! I love it! I have some great plans for next week, too, so check back on Monday for the menu.

Rick and I have completed Week 1 of Rick and Nic's 4-Week Challenge. Getting up at 5:00 a.m. all five days this week wasn't too fun, but I am so glad I did it! I was feeling great by the end of the week.

However, I will completely blow all I've done this week in one itty bitty all-expenses paid limo trip to watch OSU play Georgia today. Oh well!

Here are a couple of foodie reviews I'd like to give ...

1. Sun Crystals. I have always been an Equal girl (aspartame), but with this new health kick have been wanting to look into my options. I found this sweetener that is a mixture of Stevia and pure can sugar. One pack equals two teaspoons of regular sugar, and it's only 5 carlories! (In Weight Watcher's points, that equals 0 !!!) How does it taste? It does have a slightly different taste, and aftertaste, than either sugar or aspartame, but within a day or so I was used to it. And for only 5 calories per pack, it's worth the switch!

2. Great Value Cardio Choice Light Butter Spread with Flax Oil. A few days ago I mentioned a Cardio Choice Butter Spread that I had been using. I has such a good taste, and contains healthier oils including flax oil. But, it was a littler "fattier" than light margarine. I found the light version the other day, and it's only 50 calories per tablespoon and half the fat as the regular, making it only 1 Weight Watcher's point instead of 2. And, it's still yummy! I also recommend this!

3. Last but not least ... Whole Wheat Chocolate Chip Cookies. Last night I made Steph's recipe for whole wheat chocolate chip cookies. You can get that recipe here. I modified it slightly by using 1/2 cup Crisco and 1/2 cup applesauce in place of the butter, using 1 1/2 cups wheat flour and 1/2 regular flour, and using dark chocolate chips instead of milk chocolate. The result?? Yum! I'm still not the greatest baker, so mine didn't turn out near as thick and chewy as I would have liked. But, there were no complaints here! (In fact, pay attention Steph, Brynne said they were better than yours!! Ha! She knows not what she says, she's just a sweetie to her mommy! But, I thought that was funny! When Eli found out I was making cookies he kept saying, "Is Ms. Stephanie bringing them?")

Well, I'd better get to getting ready for my pampering day at the football game.

Have a great weekend!

  1. Whatever!!! No way! LOL! I would like to try the different ways to make them healthier! Cool! I'm glad they liked them. I use semi-sweet chocolate chips...I don't think I have ever paid attention to the dark chocolate chips...are they easy to find?

You guys have fun @ Stillwater! That sounds like a blast! Enjoy your pampering you deserve it!
